What is jeera, exactly?

Jeera is the Hindi word for cumin — the small, ridged, tan-brown seed of Cuminum cyminum, a plant in the parsley family that's been in kitchens for thousands of years. In an Indian kitchen it's the anchor spice: the first thing you drop into hot oil for a tadka, the base note of most masalas, the earthy warmth behind dal, sabzi, jeera rice, and chaas. The heat wakes them up; they get nutty, almost popcorn-like, and the flavor carries into whatever you cook next. Use whole seeds for dals, rice pilafs, sabzis, chana, aloo, and any recipe that starts with "heat oil and add cumin."

Powder is for body — it flavors from the inside, so you stir it in later. Curries, marinades, meat rubs, hummus, ground-beef fillings, chili, taco meat, and spice mixes all want powder. Powder loses its punch fast once opened, so buy the size you'll actually finish in six months.

What is shahi jeera (black cumin)?

Shahi jeera is a different plant (Bunium persicum) that grows in Kashmir, Iran, and Central Asia. The seeds are slender, dark, and a touch curved, and the flavor is smokier and more delicate than regular cumin — closer to a cross between cumin and caraway, with a whisper of pepper.

You'll see it called for in biryani, kormas, Mughlai gravies, garam masala blends, and Kashmiri wazwan dishes. It's not a substitute for regular jeera, and regular jeera isn't a substitute for it. If a recipe specifies shahi jeera or "black cumin," get the real thing.
