    • Mild, buttery flavor — versatile across South Asian, Middle Eastern and Mediterranean cuisines
    • Rich in plant protein, fiber and iron

    How to Cook

Rinse and soak kabuli chana for 8–12 hours or overnight. Drain and pressure cook with 3 cups of water for 5–6 whistles, or simmer for 60–90 minutes. For chole: prepare a rich masala of onion, tomato, ginger, garlic and whole spices; add the cooked chana and simmer for 15–20 minutes. For hummus: blend cooked chana with tahini, lemon juice, garlic and olive oil until smooth.

    Frequently Asked Questions

Are kabuli chana the same as garbanzo beans? Yes — kabuli chana, chickpeas and garbanzo beans are all the same legume (Cicer arietinum). "Kabuli" refers to the large, pale variety common in Indian, Middle Eastern and Mediterranean cooking.

How much does 2 lb of dry chana yield when cooked? Dry chickpeas roughly triple in weight when cooked. 2 lb (approximately 900g) dry kabuli chana will yield about 2.7 kg (6 lb) of cooked chickpeas.

Can I use the water from cooking chickpeas (aquafaba)? Yes — aquafaba (chickpea cooking water) is an excellent egg-white substitute in vegan baking and meringues.
