Soak in warm water for 15–20 minutes until soft and expanded. Squeeze out excess water and add to curries, stir-fries, or biryani. For best flavor, pan-fry soaked pieces with spices before incorporating into the dish. Works well in soya keema, soya pulao, and mixed vegetable curries.
