What Makes It Special
How to Use
Rinse and soak for 6 to 8 hours or overnight. Pressure cook until very soft, then simmer with butter, cream, tomato and warm spices for classic dal makhani. It also grinds with rice for idli and dosa batter.

What is the difference between urad gota and urad dal? Gota is the whole, skin-on bean, while urad dal usually refers to the split version. Gota is preferred for dal makhani.
How long should I soak it? At least 6 hours, or overnight, gives the creamiest results.
Can I make idli batter with it? Yes, though many cooks prefer split white urad for batters. Whole urad works well when ground smooth.
